As a city dweller, I'm familiar with malls and everything that they offer, especially food. Dining in Metro Manila has slowly progressed from the usual restaurant strips to giant shopping malls and I've seen a lot of establishments experiment with fusion for taste value and customer curiosity.

A fascinating fixture in one Mandaluyong City mall, particularly at The Podium (behind SM Megamall) is a restaurant that stubbornly flows with the culinary ebb. Called Tambayan Sa Kanto (TSK), it successfully holds on to its own merit of serving only authentic regional Filipino cuisine as I've sampled some of the dishes in its selection a few weeks back.

Owners Margaret and Arman are continually transforming first-time customers into patrons. With Tambayan Sa Kanto's popular takes on Ilocano-oriented flavors among other dishes, regional cuisine is elevated to award-winning status. Being a recipient of two Q Asia Awards -- for quality service and product quality, TSK is serving more than delicious food. It's also a satisfying rendezvous for various types of individuals.

Turista Trails was fortunate to sample some superstars in Tambayan Sa Kanto's menu, namely the Lechon Kawali (Crispy Pan-Fried Roasted Pork), the healthy and fresh-tasting Lumpiang Togue (vegetable spring roll), the sizzling plate-served gravy-licious Bulalo Ala Pobre and the Crispy Bagnet that's best eaten with KBL (Kamatis-Bagoong-Lasona siding) or a salad of tomatoes, fish paste, and onion. The incorporated gravy of the Bulalo Ala Pobre tasted like Christmas (almost chocolate-y), something that kids will love while the restaurant's version of the Ilocos Region pride, the bagnet, did not disappoint. Slathering the deep-fried pork with TSK's signature spicy vinegar is highly recommended.

Dining In Heritage

Most dishes in the TSK menu are a heritage for co-owner Margaret who hails from the Ilocos Region, where her dear grandmother was able to share with her the former's precious wisdom about cooking. Some selections, like the macupuno strips-topped leche flan dessert that I had, was a result of constant experimenting with flavors.

A Favorite Rendezvous

The restaurant is effectively located away from the busy human traffic at The Podium's ground floor. The act of veering to one of the mall's corner and finding TSK away from the crowd can be a sigh of relief for an intimate dining experience. With mood lighting and a high-ceiling head space at the entrance, the dining area evokes of elegance that both business people and couples on dates will appreciate.

Cozy interiors
TSK's loft is home to its spacious function room where several events such as large business meetings, out-of-the-office seminars, and even birthdays have already taken place. For traditional morning meal cravings, the restaurant also has all-day breakfast meals.
